Brownie Biscotti

Chitra Pal Brownie Biscotti

This semi-homemade biscotti is worth a try. Its amazingly good with coffee and tea or even iced tea.

Ingredients

1. 1 Pack of Brownie Mix (Chocolate Cappuccino)

2. 2 eggs

3. ½ cup of sliced almonds

4. 1 ½ cup of all purpose flour

5. 1 stick i.e. ½ cup of butter or margarine melted (unsalted)

6. ½ cup of chocolate chips (optional)

7. 1 tsp of vanilla extract

Directions

1. Preheat the oven at 350.

2. In a mixing bowl add flour and brownie mix ( I used Archer Farm’s Chocolate Cappuccino flavor with chocolate chips)

3. Add chocolate chips and almonds, sift it.

4. Now in a separate bowl add butter and eggs and whisk.

5. Then add vanilla extract to egg mixture.

6. Now add wet ingredients in dry slowly and mix with hand or mixer.

7. Mix it well to the extent of firm dough.

8. Form it in a ball and cut in two halves.

9. Now take the first half and make it as vertical stick and press it lightly to form a long thin rectangle.

10. Do it for the second and place both of them on baking sheet on the parchment paper or foil.

12. After baking it for 30 minutes remove them from oven and let it cool for 6-8 minutes.

13. Now cut them diagonally for about 1 inch.

14. Place them on the baking sheet again and bake them for another 10 minutes.

15. Now turn off the oven and let the biscotti’s sit there in warm oven for about 30 minutes. This will crisp the biscotti’s.

16. Take them out now, and cool them for 2 hours before serving.

17. Store in air tight container and serve with coffee and milk.

Orange Cake

 Chitra Pal Orange Cake

Ingredients

1. 1 big ripe orange, zested and juiced

2. ½ tsp of vanilla essence

3. 2 eggs

4. ¼ cup sugar

5. ¼ cup all-purpose flour

6. ¼ teaspoon kosher salt

7. ¼ tsp of soaked saffron in ½ cup of water (use only water)

8. ½ cup of skim milk

9. ½ cup ground blanched almonds sliced thinly

Directions

1. Preheat the oven to 325 degrees F. Spray the baking loaf tray with nonstick cooking spray

2. In the mean time, set 4-5 cups of water over medium heat.

3. Separate the eggs, putting the whites in a separate bowl and egg yolks in separate bowl.

4. Using a hand mixer, whip the egg whites until they hold stiff peaks and set aside.

5. Add the sugar and ½ tsp of vanilla essence to the yolks, and beat until the sugar is dissolved and the color has turned a pale yellow.

6. Sift in the flour and salt and mix well.

7. Add the milk and stir until combined with hand mixer.

8. Add the orange zest and juice and saffron water and mix well.

9. Now fold the egg whites into the yolk mixture.

10. Mix egg mixture into flour mixture and add almonds. Toss into the mixture well but do not over mix it.

11. Pour the batter in a baking loaf tray. Place the tray into slightly baking dish and pour in hot water until iin t reaches halfway up the sides of the baking loaf tray.

12. Bake the cake until set, about 20 to 22 minutes.

13. Remove the tray from the water bath and let cool a bit before serving.

14. Slice them and serve with hot tea or coffee.

Panjiri

Chitra Pal Panjiri

Ingredients

1. 2 cups of whole wheat flour

2. 1 cup of desi ghee ( clarified butter) / oil

3. 2 cups of almonds and cashew nuts chopped roughly

4. 1 cup of sugar or use sugar free - then ½ cup

5. ½ cup of raisins

Directions

1. In a non stick pan add clarified butter / desi ghee / oil

2. Add the Whole wheat flour when the oil becomes little hot

3. Keep heat on low flame.

4. Keep on stirring the wheat flour until it turns golden brown.

5. When the color changes to golden brown that means it is ready. Remove it from the flame

6. Add almonds and cashews to the mixture and stir it.

7. Let the mixture cool down and serve.

8. This dish is very nutritious for pregnant woman and kids. You can serve otherwise also.

Cashew Brownies

Ingredients

Chitra Pal Chocolate Brownie

1. 1 box Ghirardelli brownie mix ( if you don’t have Brownie Mix then make you own, refer recipe below)

2. ½ cup of semi chocolate chips (milk or white)

3. 1 ½ cup chopped cashew nuts.

4. 1 tsp of vanilla extract

5. 2 Egg white

6. 1 cup of olive oil or 1 stick of unsalted butter

7. 2 tsp of fat free yoghurt ( to make brownie softer)

Directions

1. Mix Ghirardelli brownie mixture with egg whites, oil or butter, yoghurt and vanilla slowly one by one.

2. Grease an 8* 8 inch pan with little butter or oil and preheat the oven at 350 for 10 minutes.

3. Pour ¼ of the mixture in pan and spread add chocolate chips.

4. Pour little brownie mix again.

5. Now add cashew nuts and spread all over.

6. Now pour rest of the brownie mixture.

7. Now bake it for 20 minutes or until the fork comes out clean if you dip in the mixture.

8. Cool it down for 15 minutes and cut into pieces.

9. Dust the sugar if you want.

10. Enjoy with coffee or tea and remember they are low fat as you have decreased little fat with egg whites and butter.

Brownie mix: - Add all ingredients. 1 cup all purpose flour, 3 tbsp cocoa powder, 1 tsp baking powder
1/2 tsp salt, 1-1/4 cup sugar (or adjust to your taste)
