Chicken Manchurian

Chitra Pal Chicken Manchurian

Ingredients

1. 2 Chicken breasts skinless chop in small cube size

2. ½ cup of all purpose flour

3. 4 tbsp of corn starch

4. Salt and pepper to taste

5. Water

6. 1 Onion grated or chopped finely

7. 3 cloves of Garlic minced

8. 1-2 Green Chilies chopped finely

9. 1 ½ tbsp of Soy Sauce

10. 3 tsp of red wine Vinegar

11. ¼ cup of Ketchup

12. 2 tbsp of hot Red Chili Sauce or more (optional)

13. 1 tsp of honey

14. 3 tsp of corn starch in ¼ cup of water mixed for sauce

15. Oil

16. Some green scallions / Green Onions for garnishing

Directions

1. Heat oil for frying in a deep dish pan.

2. In a medium bowl add all purpose flour salt and pepper to taste.

3. Now add corn starch and water and whish well till it turn to thick batter and no lumps.

4. Now add chicken to it and toss to coat all the chicken pieces.

5. Drop in one by one into the oil and deep fry them.

6. Keep on cooking all the chicken pieces and keep it aside on kitchen towel to get the excess oil.

7. In a non stick pan make the sauce for Manchurian.

8. Heat 2 tsp of oil and add onions.

9. Now add garlic and green chilies and cook till light brown.

10. Add soy sauce and Vinegar and mix it well.

11. Then add Ketchup and red chili sauce.

12. Add corn starch mixture and cook till sauce thickens.

13. Keep on stirring well and add 1 tsp of honey and whisk it well.

14. Now add the chicken pieces and toss it well till the chicken is covered in this yummy mixture.

Serve hot with tooth picks and sprinkle green onions.

Thai Green Chicken Curry

Chitra Pal Thai Chicken Curry

Ingredients

1. 4 chicken thigh or breast without fat thinly sliced

2. 200 gms Chopped green beans into thin vertical strips

3. 1 can of coconut milk unsweetened

Green Curry Paste:

1. 3 small fresh green chillies, chopped

2. 2 cloves garlic, chopped

3. 3 spring onions, chopped

4. 1/4 cup chopped fresh lemon grass

5. 1/4 cup chopped fresh coriander leaves

6. 2 tbsp oil

7. 1 tsp of fresh lime juice

8. 2 tbsp water

9. 1 tsp Asian fish sauce

10. 1/2 tsp ground cumin

11. 1/4 tsp ground turmeric

12. 3 scallions, white and green parts thinly sliced separately for garnishing

Directions

1. Prepare the green curry paste. Blend all ingredients into blender for smooth green curry paste.

2. Heat oil in a wok or non stick pan.

3. Add the green curry paste in pan or wok, keep on stirring for about 2-3 minutes until it is you can smell the spices and herbs.

4. Add the chicken and let it cook into the paste for 3 minutes.

5. Now add beans to the pan and cook, keep on stirring in between and cook it with a lid close.

6. Add the coconut milk now, stir in and simmer until broth or paste slightly thickens.

7. Enjoy hot with steamed rice.

Asian Style Fish Sticks / Pakoras

Chitra Pal Fish Pakoras
Ingredients

· Two wheat bread
· 2 tsp of Olive Oil or olive oil spray
· One Lemon
· One tsp of fresh cilantro/dhaniya


For Marinating
· 1/2 cup soy sauce (preferred-low Sodium)
· 2 cups of fresh orange juice
· 2 tsp. of sugar
· 2 tsp. of fresh chopped cilantro
· 1 tsp. of fresh chopped ginger
· 2 cloves of minced garlic
· 2 fresh fillets of Salmon (preferred – Atlantic)
· 1 teaspoon of hot sauce
· 1 teaspoon of hot chili flakes or red chili powder

Marinated Fish in Sauce

Directions:-

  • Cut two fillets into bite size pieces (approx. 6-7 pieces)
  • Marinate them into zip lock bag or plastic container from 4-24 hrs and keep it aside in fridge (preferred overnight)
  • Take out the fish 20 minutes before cooking to allow them to come in room temperature.
  • In the mean time grate the bread slices into fresh bread crumbs and take them out in separate bowl or tray.
  • Heat oil in a non stick pan/skillet.
  • Take out the fish and roll it over bread crumbs until they are all coated with it.
  • When the pan has turned hot turn down the heat to medium and put the fish piece one by one. Turning heat to medium will not smoke into your kitchen.
  • Do not flip the fish until it has been cooked to 5 mins. Or the breaded fish has turned golden brown each side.
  • Take another small pan and pour the marinating sauce into it and reduce it till it turns thick.

When the fish is cooked sprinkle fresh cilantro/dhaniya and lemon juice over it and place it over the marinating sauce. Serve hot.
