Curd Paneer with Butter Rice

Chitra Pal Curd Paneer with Butter Rice

Ingredients

1. 200 gms of paneer cubed / Indian cottage cheese

2. 2 tbsp of thick curd/ yoghurt / dahi

3. Pinch of turmeric powder

4. ½ tsp of coriander powder

5. ¼ tsp of red chili powder

6. 2 cups of boiled rice

7. 2 tbsp of butter

8. 1 onion cubed

9. 2 tbsp oil

10. Cumin powder to garnish

11. 4 tbsp of lime juice

Directions

1. Mix curd with turmeric powder, salt to taste, 2 tbsp of lemon juice, red chili powder, coriander powder

2. Stir it well and then add paneer cubes and onions in it. Marinate it for 3-4 hours minimum.

3. After 3-4 hours take out the cubes and keep it on kitchen towel so that any water content can be removed.

4. Now in a non stick pan add oil and shallow fry the paneer cubes on low heat.

5. After paneer cubes take out all oil and then sauté the onions in same pan.

6. Now mix butter in boiled rice and shake it well or toss with fork.

7. Serve hot paneer with rice and garnish cumin powder and lime juice.

Matki Misthi Dahi / Sweet Curd / Yoghurt

Chitra Pal Matka Dahi

Ingredients

1. 1 liter milk

2. 2 tbsp of curd / dahi

3. 2 tbsp of sugar

Directions

1. Warm the milk with sugar.

2. Pour them in matki / mud vessel.

3. Add 2 tbsp of curd / dahi and sugar . Stir slowly.

4. Cover the vessel with foil or mud plate. Leave it in warm place overnight.

5. In morning, keep the vessel in refrigerator.

Punjabi Dahi Vada

Chitra Pal Punjabi Dahi Vada

Ingredients

1. Urad Dal – 60 g

2. Curd 200 gms

3. Oil to fry

4. 2 small diced Green chilies

5. Onion -1/2 small

6. Chili powder, Salt, pepper powder and garam masala to taste

7. Ginger ½ tsp.

Directions

1. Soak the daal overnight, and grind it fine.

2. Beat it until foamy and light.

3. Add chopped onion, green chilies, garam masal, ginger and salt. Mix well and allow it to stand for ten minutes.

4. Spread a piece of wet muslin over a bowl and make vada over it.

5. Fry them in hot oil till golden brown.

6. Put them in slated hot water. Squeeze out the water and keep them ready.

7. Beat the curd till smooth. Add Salt and pepper to it.

8. Soak vadas in curds and decorate according to taste.

Paneer Korma

Ingredients
· 250 gms. of cottage cheese/ paneer grate with hands in small pieces
· 2 cups of green peas (preferred fresh)
· Salt to taste
· 1 tsp. of red chili powder and turmeric powder
· Grind 2 cardamoms fresh or 1 tsp. of cardamom powder
· ½ tsp. of cumin powder
· ½ tsp. of coriander powder
· ½ tsp of garam masala powder
· 2 finely grated red onions
· 1tsp. of ginger and garlic minced
· 1 cup of tomato sauce
· ½ cup of curd (preferred non fat)

Directions
· Heat oil in non skillet pan
· Add onions and ginger, garlic mixture
· When it turns golden brown add Salt and other spices along cardamom and 1 tsp of
sugar.
· Now add peas and let them cook for 3-4 minutes.
· Add tomato sauce and mix it well.
· Cook for 5 minutes and then add curd to it and let the mixture simmer for 3 minutes.
· At last add paneer to your mixture and mix it well and let it cook for 10 minutes.
· Serve hot paneer korma with parantha’s or chapatti’s or make stuffed sandwiches for
next day lunch.

Strawberry and Mango Lassi / Smoothie

Chitra Pal Stawberry and Mango Smoothie

Summers are here and everybody craves for Smoothies, so here is my simplest version of Smoothies / Lassi.

Ingredients

1. 8 Strawberries

2. 1 Mango

3. 2 tsp of Mango Pulp

4. 1 tsp of Sugar

5. 1 cup of Non Fat Plain Curd/Yogurt

6. 1 cup of Ice cubes

Directions

1. Blend diced Strawberries, Mangoes with Ice.

2. When it is turned to smooth paste add Yogurt and Mango Pulp

3. Now add sugar slowly and blend till it is mixed well.

4. Now pour into chilled glasses and serve with strawberries garnished.

Raita

What a hot parantha without Raita ? Here is the dish which cools down hot parantha’s in one second. Or you can serve as a dip to children with chips/ nachos.It is yummy with hot tandoori Chicken :)

Chitra Pal Tamatar Pyaz Raita
Ingredients

· 4 cups Curd (non fat, plain yoghurt)
· ¼ finely chopped Onion
· ¼ finely chopped Tomato (without seeds)
· 1 finely chopped green chili
· 2 tsp. finely chopped Cilantro/Coriander/Dhaniya
· Salt to taste
· 1 tsp. dry & crushed mint/pudina
· 1 cup water

Directions

Mix all the Ingredients in bowl and let it cool and serve with hot stuffed parantha’s and pickle.

Refreshing Mango Dessert

Perfect Summer dish, refreshing non fat yoghurt dip with any kind of chips or eat it like that or mix with little bit of water or make Mango Lassi or Smoothie or make kulfi for your children. A non fat curd have lots of protein intake.

Chitra Pal Mango Dessert

Ingredients
· 1 cup Mango Pulp
· 1 tsp. Kesar / Zaffran / Saffron soaked in one cup Water
· 4 cups hung Curd (optional:-non fat)
· 4tsp. Sugar

Directions
· Mix Mango Pulp and Kesar and kesar water and sugar together.
· Add hung curd
· Serve in individual bowls and enjoy with your family on hot summer day.

Tandoori Gobhi Fry

An easy sidedish with your hot parantha's.Quick and easy to learn and not at all difficult as the fancy name sounds.One of my favt.Make it one time and you will make again and again.
Chitra Pal Tandoori Gobhi Fry 
Ingredients


• 1 cauliflower / phul gobhi
• 1 tsp. zeera / cumin seeds
• 1 teaspoon red chili powder
• ½ teaspoon turmeric powder
• 1½ cup plain curd/ yoghurt
• Salt per taste
• 2 teaspoon coriander/dhaniya powder
• 1 teaspoon garam masala powder
• 1 teaspoon anardana
• 1 tsp.chopped cilantro/ dhaniya and green chilies

Directions

• Marinate Cauliflower in mixture of curd and all dry spices and chopped cilantro and green chilies for 4-5 hrs.
• Heat 2 tsp. Canola / Veg oil in a non stick pan and add cumin seeds.
• Drop marinated cauliflower one by one and mix it slowly.
• Let it cook for ten minutes and after that shift the pan in oven for 10-15 minutes (400 degrees)
If you don’t have oven, you cook in pan for 30 minutes and change the sides after 10 minutes.
• Garnish the fried cauliflower / gobhi with anardana and chopped cilantro and green chilies.
• Serve with hot parantha’s.

Punjabi Kadi

One more Punjabi dish which is very common in every home, usually on thursday's.Kids love it, Elders love it, everybody loves it.

I learnt this one in India from my sister in law. But I have done lil bit variations in it :-), by using Buttermilk and no pakoras (for all calorie conscious people). Usually people make it with Curd.
Chitra Pal Punjabi Kadi

Ingredients

1. 1 Pint Buttermilk
2. 2 cups of Besan/ Chickpea flour
3. 2 roughly chopped onions
4. Salt to taste
5. 2 tsp of red chili powder
6. 2 tsp. of amchoor
7. 1 tsp. of turmeric/haldi
8. 1 tsp. of azwain
9. 2 dry red chili
10. Veg oil
11. 3 cups of Boiled rice.

Directions

1. Blend / Mix Buttermilk, Besan, Salt , Chili Powder, Amchoor and Turmeric and keep aside.
2. Add oil in non stick pan.
3. Add azwain and onions.
4. When Onions turn golden brown add the Buttermilk mixture.
5. Simmer it to low heat and constantly stir after 5 mins each .Repeat the process till besan is fully cooked.It can take arround 40-50 minutes.
6. Take another pan and add 2 tsp of oil and add dry red chilli.
7. Take out the kadi in a bowl and add the red chili on top of the kadi and serve hot with Rice or Chapati’s
