Paneer Parantha

Chitra Pal Paneer Paranthas

Ingredients

1. 100 gms of grated Indian cottage cheese / paneer

2. 3 tbsp of chopped cilantro / dhaniya

3. 2 tbsp of chopped green chili

4. Salt and Red chili powder to taste

5. 1 tbsp of cumin powder

6. Parantha Dough of whole wheat flour

7. Oil

Chitra Pal Paneer Mixture

Directions

1. Make small individual balls of the dough.

2. Mix paneer, dhaniya, green chili, salt, cumin and red chili powder together in a bowl.

3. Flatten the balls and fill in the paneer mixture. If parantha’s become little sticky dust dry flour while flattening.

4. Heat the non stick flat pan with 1 tsp of oil each time you cook new parantha.

5. Cook them one by one on both sides.

6. Serve with mango pickle or chilled cucumber raita.

Daal Parantha

Chitra Pal Daal Besan Parantha

Do you often think what should you do with your left over daal. This is what you are looking for. Try it, you can choose any daal, I had one cup of arhaar / tuar daal which I made last night with me. So here it is recipe of Daal Parantha and within some time my breakfast was ready. Everybody loved it:)

Ingredients

1. 2 ½ cups of whole wheat flour

2. 1 cup of left over daal

3. 1 tbsp of curd / dahi

4. 1 big onion chopped finely

5. 2 green chilies chopped finely

6. 2 tbsp of coriander / cilantro / dhaniya leaves

7. 1 tsp of dried mint leaves

8. Salt and Red chili powder to taste

9. Oil

Directions

1. Mix flour with all ingredients one by one, except oil in a bowl.

2. Make tight dough mixed with all ingredients, like you usually make for paranthas.

3. Now make 7-8 balls with little oil in your hands. Flatten each bowl with help of dry flour.

4. Put one tsp of oil and spread all over. Now again make them into balls.

5. Roll them and make them into circular paranthas.

6. Heat the tawa or flat pan on high heat.

7. When pan is ready put the parantha on the pan. Cook it slightly on one side and then toss on other side.

8. Put 1 tsp. of oil on each side now and cook on both sides with help of flat spatulas.

9. Serve the hot daal paranthas with any kind of pickle or (Pickled Vegetables ) or chutney of your choice or raita of you choice.

Mattar Parantha

Chitra Pal Mattar Parantha

Ingredients

1. 2 cups of mattar

2. Salt to taste

3. 2 cup soft flour

4. Water for making dough

5. Red chili powder to taste

6. 1 tbsp of roasted cumin seeds

7. Some dry flour for making paranthas

8. Oil

Directions

1. Mix cumin seeds, peas and dry flour.

2. Add Salt and red chili powder.

3. Make the dough by adding some water.

4. Divide the dough into individual balls.

5. Oil the non stick pan or tawa on medium low heat.

6. Roll the dough balls in a circle by dipping into dry flour time to time.

7. Spread ½ tsp. of oil on the circle. Now fold into the shape of triangle and start making with belan into large triangle

8. Slide the paranthas onto the tawa. When it is cooked one side flip on the other side.

9. Oil the other side and cook till it is light borwn.

10. Serve hot with achaar or dahi ka raita.
